Japanese Christmas Cake

The customs and traditions regarding the Christmas were brought in Japan by the Christian missionaries. Usually, in Christian countries, the Christmas menu is important and varies widely from region to region, but in Japan, a Christmas menu was never established.

I wrote a few days ago how KFC managed to impose the tradition of eating fried chicken on Christmas. However, the most popular Christmas dish is much older. It is the Christmas cake, which was sold for the first time in Ginza, at the Fugiya stores in 1910.

The Japanese Christmas cake is a sponge cake, ornamented with whipped cream, strawberries and a small Santa Claus figure. It wasn’t created for the Christmas, this type of cake was usually sold until then as a cake for birthdays.

The Christmas cake was usually served on Christmas Eve and became popular in Japan during the 1950s, when the refrigerator became widely spread through the country. Before this there was even a joke saying “spoiled like a Christmas cake"… comparing the unrefrigerated Christmas cake after the date of 25th to an unmarried woman over the age of 25.

The Christmas menu is very complex in Romania (and very tasty…), so I’m not cooking today a Japanese Christmas cake. However, here is my best recipe:

Ingredients:
- Liqueur cream

• 300 ml carton thickened cream
• 1 tablespoon icing sugar
• 1 tablespoon Grand Marnier

The cream must be beaten with the icing sugar, until soft peaks form and then fold in the Grand Marnier.

- Sponge

• 4 eggs
• 1/2 cup of caster sugar
• 2/3 cup of flour
• 60g of butter

Melt the butter and let it cool down at room temperature.

Use a deep round cake pan (18-20cm deep), lined with baking greased paper.

Mix the eggs and the sugar in a bowl placed over a saucepan with simmering water. Take care and don’t allow the water to touch the bowl’s base.
Use a mixer and beat until the egg mixture become thick, creamy and light yellow (approx. 10 minutes).

Remove the bowl from the hot water saucepan and continue beating the egg mixture until it cools down to the room temperature.
Sift half of the flour over the egg mixture, mixing it lightly until homogenized, then sift the remaining flour.

Pour the melted butter and mix gently.
Pour the mixture into the prepared cake pan and bake it at moderate heat for approx. 20 minutes, until the sponge feels elastic to touch.

Remove immediately from the pan and let it cool down on a rack.

After it is cooled, cut the cake horizontally, in two halves. With one third of the amount of liqueur cream stick the two pieces together and cover the whole cake with the rest of the cream.
Decorate the cake with fruits like strawberries, peaches, cherries, etc.

Obiceiurile legate de Crăciun au fost aduse în Japonia de misionarii creştini. În ţările creştine masa de Crăciun este importantă, iar meniul diferă destul de mult de la o ţară la alta. În Japonia misionarii nu au reuşit să impună un meniu de Crăciun.

Am spus acum câteva zile cum a reuşit KFC să lanseze în Japonia moda de a mânca pui fript de Crăciun. Cel mai popular fel de mâncare de Crăciun este însă mult mai vechi. Este vorba de prăjitura de Crăciun, care s-a vândut pentru prima dată în Ginza, la magazinele Fugiya, în anul 1910.

Era o prăjitură de tip sponge, ornată cu frişcă şi fructe şi cu o figurină cu Moş Crăciun. Nici măcar nu a fost creată special pentru Crăciun, prăjituri de acest fel, fără figurnă evident, se vindeau şi mai înainte, pentru sărbătorirea zilei de naştere.

Prăjitura de Crăciun se consumă în seara de ajun şi a devenit populară prin anii 50, când frigiderele s-au răspândit în Japonia. Până atunci apăruse şi o glumă: “stricată ca o prajitură de Crăciun"… comparând o prăjitură de Crăciun după 25 decembrie, care nu a fost ţinută la frigider, cu o fată nemăritată trecută de vârsta de 25 de ani.

Meniul de Crăciun este foarte complicat în România (şi foarte gustos…), aşa că nu voi găti prăjitura de Crăciun japoneză. Iata însă cea mai bună reţetă a mea de prajitură de tip sponge.

Ingrediente:
- pentru cremă

• 300 ml frişcă
• 1 lingură zahăr pudră
• 1 lingură Grand Marnier

Se bate frişca împreună cu zahărul, apoi se adaugă Grand Marnier.

- pentru blat (sponge)

• 4 ouă
• 1/2 cană zahăr
• 2/3 cană făină
• 60g unt

Se topeşte untul şi se lasă să se răcească la temperatura camerei.

Se foloseşte o tavă circulară, adâncă de 20 cm, acoperită cu hârtie pentru prăjituri, unsă.

Se pun ouăle şi zahărul într-un vas, deasupra unui vas cu apă fierbinte, având grijă ca fundul vasului să nu atingă apa. Cu un mixer, se amestecă conţinutul, aproximativ 10 minute, până devine cremos. Se ia bolul de pe aburi şi se bate în continuare crema până se răceşte la temperatura camerei.

Se toarnă jumătate din cantitatea de făină, amestecând uşor, până se omogenizează, apoi se adaugă şi restul de făină. Se toarnă untul topit şi se amestecă uşor. Se pune conţinutul în tavă şi se pune la copt la foc moderat aproximativ 20 de minute, până când blatul este elastic la atingere. Se scoate imediat din tavă şi se pune pe un suport să se răcească. După ce s-a răcit, se taie în două, cu o treime din cantitatea de cremă se lipesc cele două bucăţi, iar cu restul se acoperă prăjitura.

Se ornează cu fructe, căpşuni, piersici, cireşe.
