Japanese traditional dish, Sansai Soba

A set of mountain wild vegetables known as sansai have been used for a long time in the Japanese Buddhist vegetarian cuisine. In the modern era some of them aren't wild anymore, being cultivated, and can be bought precooked in water.

However, you can still find restaurants selling traditional recipes based on them, like this delicious Sansai Soba I found and tasted at a restaurant in Yamadera.
