Learning about sake, Kizakura Sake Brewery

Sake, in the same way as the wine, is a drink for connoisseurs. There are many qualities of sake, depending on the water used, the rice grade or the level of rice polishing. To be able to recognize a good quality sake, you should learn a bit about its fabrication process, especially about the old, traditional techniques.

One of the best places to learn such information (and to sample some delicious sake) is located in Fushimi, Kyoto, a place easily accessible from downtown Kyoto. The Kizakura Sake Brewery is an old saka-gura ("sake brewery"), preserved as it was during its heyday...
