Tonkotsu ramen restaurant

One of the most delicious ramen bowls is, in my opinion, the tonkotsu ramen. Tonkotsu means "pork bones" and as the name says, pork bones and fat are boiled for a long time, until the broth becomes white, thick and full of flavor.

Traditionally it is served in Fukuoka, but you can find it in other areas too. Photographed here is a small tonkotsu restaurant from Namba, Osaka, with a typical Japanese atmosphere...
