Ever since the old times, fish was a staple of the Japanese diet and one of the most popular methods to prepare it is himono: with the innards removed, the fish is first dried in the sun, then grilled over the flame and traditionally consumed with nattō fermented soybeans. The result is amazingly tasty and there’s one more advantage, the dried fish can be preserved for a long time…

Himono can be found in supermarkets or in specialized shops, like the one in this photo, the Himono-juku store in Oharai-machi, Ise.
