Developed at the end of the Sengoku period as castle town for the castle built here by Toyotomi Hideyoshi, Fushimi is a great place for sake brewing because of the good water quality and the appropriate climate.

After the Fushimi castle was abandoned, the town had a difficult period, but it recovered at the beginning of the Edo period, because it became a post town used by the lords from the western Japan while traveling to Edo, and every lord was accompanied by a procession of 150 to 300 people. Thus, during the Edo Period Fushimi was hosting 83 breweries, with an impressive production of 2.7 million liters of sake.
