At the beginning of the Edo period, in Edo (today’s Tokyo) there were thousands of mobile food stalls (yatai in Japanese), most of them selling the popular buckwheat soba.

Today, the city with the most number of yatai is said to be Fukuoka, with 111 stalls, most of them located in Nakasu and Tenjin. Due to their popularity, the number could probably have been much higher, but the yatai business is strictly regulated by law.
