The Kitchen of Kyoto

Nishiki Ichiba is the most important food market in Kyoto, established as a fish market more than 400 years ago, at the beginning of the Edo period. A hundred years later, the market expanded to handle fresh fruits and vegetables.

Its location was selected due to the presence of underground water, which even in summer remains cold, under 15 degrees Celsius, helping sellers to preserve the food fresh
