One of the most delicious ramen bowls is, in my opinion, the tonkotsu ramen. Tonkotsu means “pork bones” and as the name says, pork bones and fat are boiled for a long time, until the broth becomes white, thick and full of flavor.
Traditionally it is served in Fukuoka, but you can find it in other areas too. Photographed here is a small tonkotsu restaurant from Namba, Osaka, with a typical Japanese atmosphere…
