Popular Japanese food, Sushi

Obviously, when talking about Japanese food, the most popular and the best known dish is sushi. There are many, many versions of sushi, some of them represented in my photo - which, by the way, doesn’t show real sushi: this is a sampuru food replica glass case, displayed at a restaurant from Osaka.

However, even with the huge popularity, I know that many people still confuse sushi with “raw fish"… Sushi is actually the Japanese rice mixed with a dressing consisting of rice vinegar, sugar and salt, pressed by hand (hence the name nigiri sushi - nigiri means “hand formed").
To this, a topping of raw fish, seafood (octopus, crab, clam, squid, shrimp or eel) or sweet egg omelette (tamagoyaki) is added, and sometimes the topping and the rice are bound together by a strip of nori seaweed.
